Cherry Cheesecake Bars

These easy cherry cheesecake bars make the perfect summer dessert – decadent cheesecake topped with a fresh cherry sauce!



Ingredients
For the crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1/4 cup melted butter

For the cheesecake:

  • 16 ounces (500g) cream cheese, softened
  • 1/4 cup plain Greek yogurt or sour cream
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoon vanilla

For the topping:

  • 2 1/2 cups (about 1 pound) pitted sweet cherries, quartered
  • 1 tablespoon lemon juice
  • 1 1/2 tablespoons corn starch
  • 1/2 cup granulated sugar

Instructions

  1. Preheat the oven to 325 degrees F.
  2. Line an 8x8 inch baking pan with aluminum foil, leaving an overhang, and lightly spray it with non-stick cooking spray.
  3. In a small bowl, stir together the graham cracker crumbs, sugar and melted butter for the crust until well combined.
